Healthy 4th of July Snacks!

With the 4th of July coming soon that means days off, parents and kids home, special yummy breakfasts, cookouts, parades, fireworks, friends, and family!

It can be tempting to eat and drink all day but there are delicious 4th of July themed snacks you can prepare in advance that are healthier options!

Here are a few you can try and even get the kids to join in on the fun of making them!

4th of July Firework Fruit Kabobs:

What you need: a set of skewers (6-inch bamboo is what I use), watermelon, blueberries, star-shaped cook cutter

Preparation: wash blueberries and sticks, slice watermelon and use star-shaped cookie cutter to make the star shape, slide blueberries onto stick then put watermelon star on top of skewer

Cookie Cutter Fruit Salad:

What you need: star-shaped cookie cutter, watermelon, blueberries, strawberries

Preparation: cut watermelon into slices then use star-shaped cookie cutter to make star shapes, mix in bowl with blueberries and strawberries!

Healthy 4th of July Yogurt Bites:

What you need: vanilla greek yogurt, strawberries, blueberries

Preparation: wash fruit and dice strawberries and halve blueberries, place in a silicone mold and cover with yogurt (make sure to put blueberries round side down and dice strawberries in very tiny pieces), leave them in the freezer for about 2 hours and they are ready to enjoy! You can put them in a bowl sitting on ice so they won’t melt, but they won’t last for long sitting outside on the counter so keep that in mind!

American Flag Vegetable Tray:

What you need: 1 large cookie sheet, square container for dip, 3 cucumbers, cauliflower, grape tomatoes, 2 red peppers

Preparation: wash and slice vegetables and line them up on the cookie sheet in rows of white and red, can fill container with a dill greek yogurt dip

Lightened Up 7-Layer Dip:

What you need: black beans, cherry tomatoes cut in half, 1 14 oz. can non fat refried beans, 1 1/2 cups guacamole, 1 cup hummus, 1 1/2 cups pico de gallo, 1 jar salsa, half packet taco seasoning (I usually make my own homemade healthier version but try to find one that is a little healthier if possible), 1 cup reduced fat shredded cheese of choice

Preparation: in an 8×8 pan spread refried beans in even layer, in a bowl combine hummus and half the packet of taco seasoning and mix well, spread hummus evenly on top of beans, top with remaining layers starting with chunky salsa and ending with guacamole, top with cheese and put in fridge for 2 hours before serving. Serve with corn tortilla chips!

Red, White, and Blue Sweet Summer Salad:

What you need: 3-4 cups of fresh salad mix (I like the 50/50 mix), 1/2 cup fresh blueberries, 1/2 cup fresh strawberries cut in small chunks, 1 oz. crumbled feta cheese, 1 tbsp sweet poppy dressing

Preparation: wash and prepare all ingredients, top greens with berries, cheese, and drizzle the dressing on top!
